  • - 1 lb. extra-large frozen shrimp , thawed and peeled 26-30 count
  • - 1 tablespoon high-quality extra-virgin olive oil
  • - 1 ½ teaspoons Cajun spice blend
  • - ½ teaspoon kosher salt
  • - ⅛ teaspoon cayenne pepper
  • - 1 tablespoon freshly squeezed lemon juice
  • - For serving: Your choice of cocktail sauce, tartar sauce, or a zesty homemade aioli

Method
 

Step 1: Preheat the Oven
  1. Start by preheating your oven to 400°F (200°C). This is crucial because you want that heat to be just right for roasting the shrimp evenly.
Step 2: Prepare the Shrimp
  1. In a mixing bowl, toss the thawed shrimp with high-quality olive oil, Cajun seasoning, kosher salt, cayenne pepper, and freshly squeezed lemon juice. Make sure each shrimp is well coated with the flavorful mix. The lemon juice adds a refreshing touch that balances the spices nicely.
Step 3: Arrange on Baking Sheet
  1. Spread the shrimp out on an ungreased baking sheet in a single, even layer. They shouldn't be overcrowded, as this will help them roast rather than steam.
Step 4: Roast to Perfection
  1. Pop the baking sheet into the preheated oven. Roast the shrimp for about 8-10 minutes, or until they are opaque and just cooked through. Keep an eye on them—nothing worse than overcooked shrimp!
Step 5: Serve Immediately
  1. Once they’re out of the oven, serve the shrimp hot alongside your favorite dipping sauce. They are best enjoyed fresh, straight from the oven!
