Step 1: Combine Ingredients
- In a large saucepan, combine the fresh mixed berries, sugar, lemon juice, and water. Gently fold the berries together with the other ingredients. You want the sugar to coat the fruit without crushing all the berries just yet. This initial step is crucial as it allows the berries to start releasing their juices.
Step 2: Bring to a Boil
- Place the saucepan on the stove over medium-high heat. Stir occasionally until the mixture comes to a full boil. One beautiful thing about making berry preserves is watching the colorful mixture bubble and transform.
Step 3: Adjust Heat and Simmer
- Once boiling, reduce the heat to medium to maintain a softer boil. Continue cooking uncovered, stirring frequently. You want to let it simmer for about 20 minutes. If you see foam accumulating on top, don’t be alarmed! A simple stir will help keep everything combined.
Step 4: Test for Thickness
- To determine if your preserves are ready, you can perform a quick thickness test. Before starting the cooking process, place a few spoons or ramekins in the freezer for about 10 minutes. Grab one, add a dollop of jam to the back of the spoon, and observe. If it’s mostly set, you’re good to go. If it’s still too runny, return the saucepan to the heat and continue cooking, testing in 5-minute increments.
Step 5: Cool and Store
- Once your preserves have reached the desired thickness, remove the saucepan from the heat and let it cool slightly. You might want to grab a spoon and taste it; go ahead, I won’t tell! When it has cooled enough, transfer the preserves to glass jars with fitted lids. Allow them to cool completely before sealing.
