Ingredients
  

  • 4 sausage links about 1 lb
  • 1 lb Brussels sprouts, trimmed and halved
  • 2 lbs sweet potatoes, cut into ½-inch cubes
  • 1 red onion, thinly sliced
  • 1 tbsp fresh sage, minced
  • 2 tsp fresh thyme, minced
  • 2 tbsp extra virgin olive oil
  • 3/4 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup crumbled feta cheese.
For the vinaigrette:
  • 1 tsp fresh lemon juice
  • 1 tsp honey
  • 3 tbsp apple cider vinegar
  • 2 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/3 cup olive oil

Method
 

Step 1: Preheat the Oven
  1. Start by preheating your oven to 400°F (200°C). This temperature is perfect for roasting and ensuring that your vegetables get that lovely caramelization without burning.
Step 2: Prepare the Ingredients
  1. While the oven warms up, grab your fresh ingredients. Clean and chop the Brussels sprouts, sweet potatoes, and red onion as described in the ingredients.
Step 3: Combine on the Sheet Pan
  1. On a large sheet pan, toss the sweet potatoes, Brussels sprouts, and red onion with olive oil, salt, pepper, sage, and thyme. Spread them out evenly.
Step 4: Add the Sausages
  1. Nestle the sausages among the vegetables. This way, the flavors will blend beautifully as everything cooks.
Step 5: Roast
  1. Pop the sheet pan in the oven and roast for 25-30 minutes, or until the sausages are cooked through and the veggies are fork-tender and caramelized.
Step 6: Make the Vinaigrette
  1. In a bowl, whisk together the vinaigrette ingredients: lemon juice, honey, apple cider vinegar, mustard, garlic, salt, and pepper. Slowly drizzle in olive oil while whisking.
Step 7: Serve
  1. Once everything is cooked, take it out from the oven. Drizzle the vinaigrette over the warm dish, add crumbled feta cheese on top, and serve immediately.
